SEATTLE, September 3, 2025 — Ramie, Capitol Hill’s celebrated Vietnamese restaurant from sibling chefs Trinh and Thai Nguyen, will open for weekend brunch in September.
The brunch menu is inspired by the vibrant morning scene in Vietnam and will feature classic Vietnamese breakfast dishes. Guest can also look forward to a selection of French pastries, brunch cocktails, and Vietnamese coffee.
“In Vietnam the streets come alive as fragrant steam rises from fresh broken rice, as eggs are fried, and pork chops are cooked over charcoal grills,” said Trinh Nguyen. “It’s a cool vibe.”
“Bánh mì chảoto is prepared to order and perfect cups of cà phê sữa dá consumed. There are shop’s full of beautiful French pastries with lines out the door,” she adds. “Breakfast is a ritual. The fuel that gives the hardworking people the energy to get through their long days.”
Trinh Nguyen completed an intensive pastry program at Ferrandi Paris in the fall of 2023. Brunch allows her the opportunity to create a selection of French pastry each week in addition to the restaurants elevated dessert program.
The menu will include appetizers like Khoai Tây Pavé, shrimp layered with golden, crispy potatoes; Trứng Đào Đào, a perfectly cooked egg with the options to add crème fraiche or caviar; and Bánh Bao Chiên, crispy fried bao.
Rice and Noodle options will include Xôi Mặn, savory sticky rice, Vietnamese cinnamon ham, Chinese sausage, pork floss, scallion oil confit, and fried shallot; Cơm Tấm, broken rice, pork chop, toasted rice powder pork skin, pork and egg meatloaf, fried egg, and pickled vegetables; and Phở Trộn Bò, rice noodles, bean sprouts, garlic chives, yu choy, garlic, and shallot.
Bánh Mì Combos will include Bánh Mì Cá, sardines in tomato sauce with two fried eggs; Bánh Mì Pâté & Egg, two fried eggs, pâté, and Laughing Cow cheese; Bánh Mì Xíu Mại, pork meatballs in tomato sauce with two fried eggs; and Bánh Mì Trứng, two fried eggs with onions and soy sauce.
Croque Bánh Mì will include Croque Chu, bánh mì with Vietnamese ham, Laughing Cow cheese, béchamel, herb aioli, cured pork jowl, pickled daikon, jalapeño sambal, and Maggi soy and Croque Di, bánh mì with Vietnamese ham, Laughing Cow cheese, béchamel, herb aioli, Gruyère, fried egg, pickled daikon, jalapeño sambal, and Maggi soy.
Pastry options will include Croissants, Pain au Chocolate, Gallette des Rois, Fresh Cream and Strawberries, and Paté Chaud.
Vietnamese coffee will include cold brew, condensed milk coffee, coconut cream coffee, and salted cream coffee.
Vietnamese-inspired brunch cocktails will include Cà Phê-tini, Vietnamese coffee martini; Negroni Trắng, Song Cai floral gin, Dolin dry, and Besk with a lemon twist; Sương Mai, cucumber-infused dry gin, St. Germain, Thai basil, and lime; and Tra Da, Jasmine tea infused vodka, Aveze, honey, and lime. A Mimosa will also be offered with choice of guava, passionfruit, calamansi, grapefruit, or strawberry juice.
Brunch begins on Saturday, September 20 and will be offered from 10am to 2pm on Saturday and Sunday moving forward. Ramie will open for dinner at 5pm.
“We want brunch to be a place for guests to slowdown and recharge after a full and busy week,” said Trinh Nguyen.
